Rice Tomato Pilaf
Ingredients
1oz butter
2 cups white rice
½ cup wild rice
3 cups tomato juice
1 teaspoon salt
½ teaspoon freshly ground black pepper
1 teaspoon cumin
2 bay leaves
1 teaspoon coriander
Directions
Bring water to boil, add rice and wild rice. Add everything
else. Simmer gently until all the water is absorbed -- about 15
minutes. Cover and let it stand a few minutes.
